I love to visit the local food markets, often referred to as "wet markets," everywhere I travel in the world.
This is where you see the heart and stomach of the culture and come into contact with some of the "average" locals.
Kowloon, on the mainland China side of Hong Kong, is a great place to visit the local wet markets.
In our culture, all our food is usually clinically washed and prepackaged.
We are so isolated from the raw form of food that many city people don't even know where it comes from.
In this market, and many like it around the world, you know its fresh because you see it first in its raw, sometimes live form.
This tradition is undoubtedly based on two logical facts.
In many countries around the world, refrigeration was not always available on a wide scale and people shopped daily.
When they went to the market, they wanted proof their food was fresh.
